Recipe Ingredients for Apricot Pie

20 oz. apricots, in pear juice
4 T. corn starch
7/8 cup sugar
1/2 t. cinnamon
2 1/3 cups flour
1 t. salt
2/3 c. canola oil
1/3 c. milk

Recipe Directions for Apricot Pie

  1. Mix sugar, corn starch & cinnamon. Add juice of 2 cans apricots. Stir and bring to boil until sauce clarifies. Add apricots & set aside

  2. Crust

  3. Sift together.

  4. 2 1/3 cups flour

  5. 1 t. salt

  6. In a 1 cup measure, pour about 2/3 full with oil (I use blend of corn & canola). Add milk to oil to measure 1 cup. Add to flour & mix until dough leaves bowl. Divide in two.

  7. Roll out between 2 pieces of waxed paper. Put bottom crust in dish. Arrange apricots evenly.

  8. Roll out top crust in a rectangular shape. Cut into thin strips. Start by making a cross. Then: top, horizontal; right, vertical; bottom, horizontal; left, vertical; repeat???

  9. Bake at 415 degrees for 40 minutes
