Ingredients (Makes 55 servings)
Directions
In small bowl combine apricots and just enough boiling water as to cover. Let sit for 5 mins then drain.

In large bowl mix applesauce, sugar / Splenda, baking powder, cinnamon and baking soda.

Beat until combined then fold in egg and vanilla and beat until well mixed.

Beat in as much flour as you can then using a wooden spoon fold in apricots, oats, nuts and any leftover flour.

Drop dough as rounded teaspoons 2 inches apart on ungreased tray.

Bake at 375 for 10 mins (until edges are golden.) Transfer to a wire rack to cool.
