Recipe Ingredients for Apricot Oatmeal Bars

3/4 c. butter, cut up
1 c. dried apricots, firmly packed
1 1/2 c. rolled oats
1 c. flour
1 c. dark brown sugar, firmly packed
1/4 tsp. salt
1/4 tsp. cinnamon
1 1/2 tsp. vanilla extract

Recipe Directions for Apricot Oatmeal Bars

Line square baking pan with aluminum foil and spray foil. Preheat oven to 350 F. In mixing bowl, combine dry ingredients. Chop apricots and mix in. Melt butter and add to bowl along with the vanilla. Mix well. Mixture will be crumbly. Dump dough into prepared pan and press until packed. Bake until top is golden brown, 35-40 min. Allow to cool completely. Remove entire square from pan. Peel away foil. Cut into 16 smaller squares. Store in an airtight container.
