Recipe Ingredients for Apricot Oatmeal Bars

3/4 cup applesauce, unsweetened
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups rolled oats
1 cup light brown sugar
6 tablespoons ( 3/4 stick) unsalted butter
10 ounces apricot preserves

Recipe Directions for Apricot Oatmeal Bars

  1. Place a wire mesh strainer over a mixing bowl deep enough to keep the bottom of the strainer from touching the bottom of the bowl. Add applesauce and let drain for 15 minutes.

  2. Place oven rack in middle position and heat oven to 350 degrees. Lightly spray the interior of an 8-inch square baking pan with vegetable oil.

  3. While applesauce drains, add flour, baking powder and salt to a large mixing bowl and with a wire whisk mix the dry ingredients together until well-combined. Add oats, brown sugar and butter to the bowl and stir together until coarsely mixed (this is not a batter, it should look somewhat lumpy). Add 6 tablespoons drained applesauce (there will be some leftover in strainer) to the bowl and mix until evenly distributed.

  4. Press half the oat mixture into the bottom of the pan. With a small spatula, spread all of preserves over the oat mixture. Sprinkle the remaining oat mixture evenly over the preserves and bake for 40 minutes, or until golden brown. Place pan on a heat-safe wire rack to cool. With a sharp knife, cut into 2-inch by 1-inch bars.
