Delicious muffins for any time of day! Low in cal (144). And that's with the analyzer saying splenda had 240 cals. Does it really?! Anyway... This is a super easy recipe... YUM!

Recipe Ingredients for Apricot Muffins

1 cup dried apricots, chopped
4 tbsp butter, melted
3/4 cup skim milk
2 eggs
1 3/4 cup flour
1/4 cup splenda
3 tsp baking powder

Recipe Directions for Apricot Muffins

  1. Lightly oil a muffin tin and preheat oven to 200 deg cel

  2. Put the first 7 ingredients in a bowl and mix well, then add the remaining ingredients and belnd until just mixed.

  3. Bake for 10-15 mins
