Recipe Ingredients for Apricot Muffins

1 cup, halves Apricots
4 serving Shortening
0.5 cup Sugars, Granulated
1 large Egg, Whole
1.25 cup Wheat Flour, White, All-purpose, Enriched, Bleached
2 Teaspoon Baking Powder
0.5 tsp Salt, Table
0.25 tsp Nutmeg, Ground
0.25 cup Milk, Lowfat, Fluid, 1% Milkfat
0.25 cup pieces or chips Walnuts, English

Recipe Directions for Apricot Muffins

Combine apricot pieces and lemon juice. Cream shortening and sugar, beat in egg and stir in apricots. In separate bowl, sift flour, baking powder, salt and nutmeg; add to first mixture alternately with milk. Add chopped nuts with the last portion of flour. Fill greased muffin tins two thirds full. Sprinkle a little granulated sugar on top of each muffin. Bake for about 20 minutes at 350F (180C).
