Dried Apricots, Soy, Hazelnut--- Flours can be changed around easily. Oil and hazelnut flour not properly analyzed.

Recipe Ingredients for Apricot Hazelnut Soy Muffins

1 c flour, white, unbleached
1 c Spelt Flour, Arrowhead Mills
1 c flour, hazelnut
1/2 c Soy Flour, Arrowhead Mills
1 c Dried Apricots, chopped
1 1/2 tsp. cinnamon, ground
5 tsp. baking powder
2 eggs
1 c milk, 2%
1/2 c water
2/3 c Oil, Soybean
1/2 c honey

Recipe Directions for Apricot Hazelnut Soy Muffins

  1. Combine top list (dry) and mix well.

  2. Combine bottom list (wet) and mix well.

  3. Blend both together briefly, lightly.

  4. Pour into greased/silicone muffin tins

  5. Bake at 400 for 20-25 minutes.
