Apricot glazed pork medallions - works with chicken breasts as well.

Recipe Ingredients for Apricot Glazed Pork Medallions

1 lb pork tenderloin, cut into medallions
1/2 cup apricot preserves, sugar free
1/2 c white wine
1 tsp dry mustard
1 tsp ground ginger
1/2 tsp salt
1/2 tsp pepper
1/2 tsp sage
1/2 tsp basil
1/2 tsp thyme
2 garlic cloves, minced

Recipe Directions for Apricot Glazed Pork Medallions

  1. Preheat oven to 350. Trim tenderloin, set aside.

  2. In small saucepan, combine preserves, cup wine, mustard, herbs and spices, and garlic over medium heat. Simmer for 3 minutes to make a glaze.

  3. Season all sides of medallions with salt and pepper, place in shallow baking dish.

  4. Coat medallions with glaze and bake for 30 minutes or until pork is done.
