An easy and flavorful dish. I recommend pounding the pork chops prior to cooking with a mallet.

Recipe Ingredients for Apricot Dijon Pork Chops

1 tbl Smart Balance spread
2 pork chops
2 tbl sugar-free apricot preserves
1/4 c shallots, chopped
1 tbl dijon mustard
1/2 tbl cider vinegar

Recipe Directions for Apricot Dijon Pork Chops

  1. Season pork chops with salt and pepper and sautee in skillet with half of the butter for approximately 12 minutes.

  2. Remove pork chops. Add to skillet the rest of the butter and ingredients. Bring to simmer, return pork chops to skillet, and cook another three to four minutes.
