Apricot Cobbler Recipe

Apricots grown from our tree, pitted and halved then frozen in gallon size freezer bags makes a wonderful cobbler. So sweet you really don't need to sweeten them.

Recipe Ingredients for Apricot Cobbler

8 c. apricots, pitted and cut into halves
1/2 c. sugar
2 tbsp. cornstarch
1/4 c. unsalted butter
1 c. flour
2 tbsp. sugar
1 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1/2 c. milk
1 large egg

Recipe Directions for Apricot Cobbler

  1. Preheat oven to 400*.

  2. Lightly butter a casserole dish. Pour frozen apricots into dish. Mix together sugar and cornstarch - pour over apricots and toss.

  3. Cover with foil and bake in 400* oven for 30 min. until bubbly.

  4. In a medium size bowl - combine flour, 2 Tbsp. sugar, cinnamon, salt and baking powder. Using a pastry blender, cut butter into flour mixture to resemble small crumbs.

  5. In a measure cup, combine milk and egg. Using a fork, mix milk/egg into flour/butter mixture just until all dry is moistened.

  6. Remove cooked fruit from oven; remove foil.

  7. Drop spoonfuls of dough onto hot/bubbly apricots. Return to oven for another 15-20 min. until dumpling is lightly browned.
