Traditional chicken salad with apricots, almonds, and basil added. It's even got a little kick from red pepper flakes.

Recipe Ingredients for Apricot Chicken Salad with Almonds and Basil

15 oz chicken, breast, meat only, cooked and chopped
3/4 cup celery, chopped
1 cup almonds, roasted and chopped
25 dried apricots, quartered
1 medium onion, carmelized and chopped
1 teaspoon red pepper flakes
1/4 cup Hellmann's light mayonnaise
1 tablespoon apricot preserves
1 tablespoon fresh basil, chopped

Recipe Directions for Apricot Chicken Salad with Almonds and Basil

  1. Add chicken, celery, almonds, apricots, onion, and red pepper flakes in a large mixing bowl. Mix until uniform.

  2. In a separate bowl, mix together the mayo and preserves. Once uniform, mix in the basil.

  3. Add mayo mixture to chicken mixture and stir together until well coated.
