This is a crustless fruit "pie" with crumb topping. So easy.

Recipe Ingredients for Apricot Blueberry "Pie"

4 cups apricots, sliced and pitted
1 cup blueberries
3/4 cup brown sugar, packed
1/3 cup flour
1/2 cup flour
1/2 cup brown sugar, packed
3 tbsp butter

Recipe Directions for Apricot Blueberry "Pie"

  1. Preheat oven to 375.

  2. Spray deep dish pie plate with oil (or use a casserole dish). Combine 3/4 cup brown sugar and 1/3 cup flour together and then toss with fruit. Fill pie plate with fruit mixture.

  3. For the crumb topping: combine 1/2 cup flour with 1/2 cup brown sugar and then add the butter and mix until crumbly. Sprinkle on top of fruit filling and bake for 40-50 minutes until fruit is fairly tender and bubbling and topping is browned.

  4. Serve at room temp.
