Apricot Almond Meringue Drops (one serving is two cookies)

Recipe Ingredients for Apricot Almond Meringue Drops

2 oz egg white
1/2 cup sugar
1 tsp vanilla extract
1/2 cup dried apricots, chopped
1/4 cup sliced almonds

Recipe Directions for Apricot Almond Meringue Drops

  1. Preheat over to 250 degrees. Line 1 baking sheets with parchment paper.

  2. Beat egg whites until soft peaks form. Gradually add sugar while continueing to beat until stiff peaks form. Mix in vanilla on low speed; Fold in apricots and almonds by hand.

  3. Drop 40 small mounds on prepared parchment papers, spacing 1 inch apart.

  4. Bake for 1 hour. Turn off oven and leave cookies in the oven for 2 hours more, or until centers are dry. Store in an airticht container.
