More to pumpkin than pie and carving, but first you have to make this base puree. Preferably you would buy a smaller "pie" type of pumpkin. This is the way I did it with my Jack O Lantern and it worked fine for the pancake recipe I listed. Pumpkins differ in sweetness and texture, but they all blend up into a beautiful smooth puree to use as stock for soups, pancakes, etc. Fresh Pumpkin is loaded with fibre, vitamins and it is a shame so many just rot away. Give them a life after that Hallowed Evening spree.

4 pound Pumpkin

Recipe Directions for Apres Hallowe'en Pumpkin Power

  1. scrape out seeds and goop if you haven't already done this prior to carving your Jack O Lantern ( and roasting the seeds in butter, oil and salt)

  2. preheat oven to 350F or 325F if convection

  3. cut pumpkin into big pieces and place on baking sheet

  4. bake until soft, about 45 minutes, let cool

  5. cut and scrape pulp from skin, put in blender and pulse until smooth

  6. make whatever you want that calls for pumpkin puree from your fresh batch

  7. if the recipe calls for a can of puree: may have to adjust your recipe for sweetness depending on what kind of pumpkin you have

  8. bag the rest into 1 or 2 cup freezer bags and freeze for future recipe and experimentation
