A really hearty breakfast muffin!

Recipe Ingredients for Applesauce raisin bran muffins

1/4 cup vegetable oil
3 cups Raisin Bran Cereal
1 1/2 cup skim milk
1/2 cup lowfat buttermilk
1/2 cup unsweetened applesauce
2 cups flour
4 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
2 large eggs
1/2 cup brown sugar

Recipe Directions for Applesauce raisin bran muffins

Soak cereal in skim milk for 5 minutes to soften. Sift dry ingredients and set aside. In a large bowl mix oil, buttermilk, applesauce, sugar and eggs. Add cereal mix and combine. Fold in dry ingredients. Place 1/3 cup of mixture in 16 muffin paper lined cups in muffin tin. Bake at 400 degrees for 20 to 25 minutes until inserted toothpick comes out clean.
