Low calorie, oil free version of pancakes

Recipe Ingredients for Applesauce Pancakes

1 1/2 cups unbleached flour
1 tablespoon baking powder
3/4 cup unsweetened applesauce
1 cup 2% low-fat milk
2 egg whites, lightly beaten
1 tsp vanilla extract
1/2 tsp cinnamon

Recipe Directions for Applesauce Pancakes

  1. Heat pan or griddle to medium heat. lightly oil surface

  2. mix dry ingredients in large bowl

  3. put egg whites in small bowl, beat until lightly frothy, add other wet ingredients.

  4. Pour wet into dry and mix until just combined, there will be lumps still, don't worry.

  5. pour 1/4 cups of batter onto skillet.

  6. Makes 12-13 pancakes at this size.
