Healthy Applesauce Blueberry muffins

Recipe Ingredients for Applesauce Oat Muffins

1 cup oatmeal
1 1/2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1 cup unsweetened applesauce
4 oz vanilla soy milk
1/2 cup brown sugar
1/4 cup Vegetable Oil, Canola
2 egg whites
1 cup blueberries

Recipe Directions for Applesauce Oat Muffins

  1. 1. Preheat oven to 400 F. Line twelve muffin cups with paper baking cups (or lightly oil the bottoms of the muffin cups.)

  2. 2. Prepare ropping by mixing the cereal, brown sugar and cinnamon together. Add the melted butter and mix well.

  3. 3. Prepare muffins by combining the cereal, flour, baking powder, baking soda and cinnamon in a large bowl. Mix well.

  4. 4. In a separate bowl, mix together the applesauce, milk, brown sugar, oil and egg.

  5. 5. Add the dry ingredients to the wet ingredients and stir until the dry ingredients are moistened.

  6. 6. Bake of 18 to 20 minutes. Remove from oven. Serve warm
