Good for you muffins with soy flour and soy milk.

Recipe Ingredients for Applesauce Oat Muffin

1 1/2 cups all purpose white flour
1/2 cup soy flour
3/4 cup rolled oats
1/2 cup brown sugar
1 tablespoon baking powder
1 1/4 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
2 large eggs
1/4 cup vegetable oil
1/2 cup applesauce
1 cup unsweetened soy milk

Recipe Directions for Applesauce Oat Muffin

  1. Preheat oven to 400 degrees.

  2. Blend together all dry ingredients in a large mixing bowl.

  3. Combine all liquid ingredients in a separate bowl.

  4. Gradually add liquid ingredients to dry ingredients.

  5. Blend slowly until all ingredients are thoroughly mixed. Do Not Ovemix.

  6. Fill paper lined muffin tin with batter, three quarters full.

  7. Bake for 13 to 15 minutes
