A healthier version of an apple spice loaf. Serve on its own, or with cream cheese icing or butter/margarine spread.

Recipe Ingredients for Applesauce 'n Spice Cake

2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 1/2 teaspoon pumpkin pie spice
1/8 cup sugar (NOTE: use 1 cup Splenda)
1/2 cup vegetable oil
1 1/4 cups unsweetened applesauce
1/2 cup egg beaters
3 tablespoons milk, 1%

Recipe Directions for Applesauce 'n Spice Cake

  1. Preheat oven to 350 degrees

  2. Sift flour, baking soda, baking powder, salt, and spices together

  3. In a large bowl combine Splenda, oil, applesauce, egg beaters, and milk (NOTE: sugar is noted in the ingredients only to calculate the proper calories in the recipe since the Splenda database entry is inaccurate)

  4. Stir the dry ingredients into applesauce mixture (if desired, 1/2 cup of pecans can be mixed in at this stage in addition)

  5. Pour into greased 9x5" loaf pan.

  6. If desired, mix 1/4 cup pecans, 1/4 cup brown sugar, and 1/2 teaspoon cinnamon together and sprinkle over batter for topping

  7. Bake 60-75 minutes or until pick inserted comes out clean

  8. Cool in pan
