By using stevia powder, you can reduce the sugar to 1/2 cup instead of 1 cup, which means lower sugar, lower fat and lower calories.

Recipe Ingredients for Applesauce Muffins

1/2 cup coconut oil
1/2 cup applesauce
1/2 cup sugar
1/4 tsp white stevia powder
1 1/2 cup whole wheat pastry flour
3/4 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp allspice
1/2 tsp cinnamon
1/4 tsp nutmeg

Recipe Directions for Applesauce Muffins

  1. Mix dry ingredients together.

  2. Add wet ingredients to dry ingredients (coconut oil has to be warm and so does the applesauce. Before adding to dry ingredients, heat both applesauce and coconut oil).

  3. Mix well and spoon into cupcake pans (grease if not using silicone).

  4. Bake at 400 degrees for 15 to 20 minutes.
