Applesauce-Carrot Spice Cake from Betty Crocker's Win at Weight Loss Cookbook, p230. This is a delicious, lighter version of carrot cake. It uses applesauce to keep the cake moist while reducing the amount of oil. Oats and whole wheat flour add fiber to the cake, and the icing is a low fat version that works so well it doesn't need to cover the entire cake.

1 cup Quick Cooking Oats
1.25 cup Unsweetened Applesauce
1 cup, packed Sugars, Brown
2 cup, grated Carrots
2 extra large Egg, Whole
0.33 cup Vegetable Oil, Canola
1.5 cup Whole Wheat Flour
2 Teaspoon Baking Powder
1 tsp Leavening Agents, Baking Soda
0.5 tsp Salt, Table
1 tbsp Pumpkin Pie Spice
0.5 cup Golden Raisins
4 oz Cream Cheese Light
0.25 cup, unsifted Sugars, Powdered
46 grams Milk, Nonfat, Fluid
1 tsp Vanilla Extract

Recipe Directions for Applesauce-Carrot Spice Cake (Win At Weight Loss Cookbook)

  1. Heat oven to 350F. Spray 12-cup fluted tube cake pan with cooking spray.

  2. In large bowl, mix oats, applesauce, brown sugar, shredded carrots, eggs and oil with spoon until well mixed. Stir in remaining cake ingredients (except for cream cheese, powdered sugar, milk, and vanilla) just until moistened. Pour into pan.

  3. Bake 50 to 55 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan to wire rack. Cool completely, about 1 hour.

  4. In small bowl, beat cream cheese and powdered sugar with electric mixer on medium speed until smooth. Beat in milk and vanilla until well mixed. Spoon over cake.
