A bit of a dense dessert, one piece will surely satisfy. I've omitted the 1/4 cup of raisins and the icing (1/4 cup of confectioner's sugar mixed with 1 tsp of water and drizzled over the cake), but I top with light cool whip and don't miss a thing.

Recipe Ingredients for Applesauce Cake

1 cup all-purpose flour
3/4 cup sugar
1/4 cup cornstarch
1 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 cup unsweetened applesauce
1/4 cup water
77 grams vanilla yogurt
2 egg whites, beaten
1/2 teaspoon almond extract

Recipe Directions for Applesauce Cake

  1. In a large bowl, combine the first eight ingredients. Combine the applesauce, water, yogurt, egg whites and almond extract. stir into the dry ingredients just until moistened.

  2. Pour into a 8-in. square baking dish sprayed with non-stick cooking spray. Bake at 350 for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
