Recipe Ingredients for Applesauce, Bran, Oatmeal Muffins

1 1/4 c. all-purpose flour
1 c. quick-cooking oats
3/4 c. wheat germ
1/2 c. packed brown sugar
1 tsp baking powder
1 tsp ground cinnamon
3/4 tsp baking soda
1/4 tsp salt
1/2 c. raisins
1 c. applesauce
1/2 c. fat-free milk
1 tbsp canola oil
1 tbsp corn syrup, light
1 large egg
1 Cooking spray

Recipe Directions for Applesauce, Bran, Oatmeal Muffins

  1. Preheat oven to 375.

  2. -Combine flour and the next 7 ingredients (flour through salt) in a medium bowl.

  3. -Stir in raisins; make a well in center of mixture.

  4. -Combine applesauce and next 4 ingredients (applesauce through egg); stir well with a whisk.

  5. -Add to flour mixture, stirring just until moist.

  6. -Spoon the batter into 12 muffin cups coated with cooking spray.

  7. -Bake at 375 for 18 minutes or until the muffins spring back when touched lightly in center.

  8. -Remove muffins from pans immediately; cool on a wire rack.

  9. Note: These muffins freeze very well. Before freezing, let the muffins cool completely on a wire rack. Store them in a heavy-duty zip-top plastic bag in your freezer for up to a month.
