Taken from the Quaker Unprocessed Bran box, with a couple of minor substitutions.

Recipe Ingredients for Applesauce Bran Muffins

1 1/4 cups whole wheat flour
1 cup unprocessed Bran
24 teaspoons Splenda no-calorie granulated (one-half cup)
1 tablespoon baking powder
3/4 teaspoon ground cinnamon
1/2 teaspoon salt
3/4 cup unsweetened applesauce
1/4 cup skim milk
1/4 cup canola oil
2 egg whites

Recipe Directions for Applesauce Bran Muffins

  1. Heat oven to 400 F.

  2. Line 12 muffin cups with paper muffin cups or spray bottoms only with cooking spray.

  3. In large bowl, combine flour, bran, Splenda, baking powder, cinnamon and salt. Mix well.

  4. In medium bowl, combine applesauce, milk, oil and egg whites. Blend well.

  5. Add all at once to dry ingredients. Mix just until dry ingredients are moistened. (Do not overmix.)

  6. Fill muffin cups about 2/3 full.

  7. Bake 18 to 20 minutes or until golden brown and wooden pick inserted in center comes out with a few moist crumbs clinging to it.

  8. Cool muffins in pan on wire rack for 5 minutes.

  9. Remove from pan. Serve warm.

  10. Variation: Add 1/2 cup raisins or 1 cup fresh or frozen (do not thaw) blueberries to batter. (These additions will obviously affect nutrition info.)
