Can use 5 to 6 egg whites instead of 2 eggs and 2 egg whites. These are very sweet with 1.75 cups of syrup. Try reducing the syrup, perhaps substituting a flax seed and water mixture or a little more applesauce.

Recipe Ingredients for Applesauce blueberry oat and whole wheat muffins

1 cup whole wheat flour
1 1/4 cups flour
1 1/2 cups rolled oats
2 eggs
2 egg whites
1 3/4 cups maple syrup
2 tsp baking soda
1 tsp baking powder
2 tsp cinnamon
1 tsp nutmeg
1 tsp cloves
1/3 cup grapeseed oil
1 1/2 cups blueberries
1 1/2 cups applesauce

Recipe Directions for Applesauce blueberry oat and whole wheat muffins

Sift together dry incredients. Cream syrup and oil for several minutes. Add syrup and whip for 5 minutes. Blend in applesauce. Add dry mixture in stages. Add berries. Bake at 350 for about 30 to 40 minutes.
