These muffins are easy to make and you can alternate the flavors by switching applesauce or dried fruits.

Recipe Ingredients for Applesauce (Blueberry) Muffin Tops

3/4 cup flour
1/2 cup whole wheat flour
1/2 cup sugar
1 tbsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. cinnamon
2 cups All Bran
1 1/2 cup applesauce (blueberry)
1/4 cup 1 % milk
3 egg whites (or 1 egg)
1/2 cup dried cranberries

Recipe Directions for Applesauce (Blueberry) Muffin Tops

  1. Preheat oven to 400F.

  2. Spray a muffin top pan with non-stick spray (Pam)

  3. Mix together, applesauce (I use three mini blueberry applesauce cups), All Bran and milk.

  4. Let rest for 5 minutes and add egg, mix well with a fork.

  5. Mix together all dry ingredients.

  6. Add wet ingredients to dry ingredients and mix just enough to wet, don't overmix.

  7. Using a spring ice cream scoop, divide batter equally between the 12 molds of the muffin top pan.

  8. Bake at 400F for 20 minutes.
