Recipe Ingredients for Applelicious Sandwiches

2 Gala apples
1/4 cup chopped walnuts
8 oz. neufchatel cheese
4 2/5 oz. blue cheese crumbles
1 tablespoon honey
5 oz. arugula

Recipe Directions for Applelicious Sandwiches

  1. Toast chopped walnuts in skillet.

  2. Thinly slice apples.

  3. Combine softened neufchatel cheese and blue cheese crumbles, honey and toasted walnuts until blended. Add freshly ground pepper to tasts. Spread 1 side of each of 28 thin bread slices with 1 T. of the cheese mixture. Divide the arugula among 14 bread slices. Top with apple slices and remaining 14 bread slices. Spray griddle or skillet with pan spray and toast sandwiches 3-4 minutes on each side until golden and cheese is melted.
