Even though I'm not a kid anymore, I still find that I can be a bit picky when it comes to fruit. This is a great way to quickly use up an apple or two!!

Recipe Ingredients for Applecakes

1 cup Bisquick Original All Purpose Baking Mix
1 Egg
1/2 cup 1% Milk
1 teaspoon Pumpkin Pie Spice
2 medium Apples, pared and cored
1 tbsp pure maple syrup, for serving

Recipe Directions for Applecakes

  1. Slice the pared, cored apples into 1/8" rings.

  2. Combine all ingredients except for the apples and syrup in a bowl. Mix batter well.

  3. Dip the apple rings into the batter and cook them on a griddle or pan set on medium-low, similar to how you would make normal pancakes. Cook for 1-2 minutes per side.

  4. Serve with maple syrup and enjoy.
