Makes 18 servings



Slightly healthier alternative to an all time favorite. Feel free to use all whole wheat flour, you might want to up the applesauce to 1 cup to aid in retaining moisture if you do. Can use splenda instead of sugar as well, just follow package recommendations for substitution.

Recipe Ingredients for Apple Zucchini Bread

2 cups All purpose flour
2 cups whole wheat flour
2 tablespoon ground flaxseed
2 cups sugar
1 tablespoon Baking Soda
1 1/2 teaspoon cinnamon
1/4 teaspoon salt
4 eggs
3/4 cup unsweetened apple sauce
1 tablespoon vanilla extract
2 cups shredded zucchini
1 cup shredded apple
1 1/2 cup pecans
1 1/2 teaspoon lemon zest

Recipe Directions for Apple Zucchini Bread

  1. Makes 3 loaves or 18 muffins

  2. Preheat oven to 350 degrees.

  3. In large bowl combine flour, baking soda, cinnamon, salt.

  4. In a medium sized bowl beat eggs. Then add applesauce, sugar, vanilla and lemon zest.

  5. Pour wet mix into dry mix and combine thoroughly (will be stiff.) Then add zucchini, apples and pecans.

  6. Bake loaves in lightly greased pans at 350 for 50-55 mins or until toothpick inserted in the center comes out clean. Bake muffins at 350 for 25-35 minutes (depending on size) until they pass the toothpick test.

  7. Let rest 20 minutes until cool to touch and remove from pans.
