Recipe Ingredients for Apple Upside-Down cake

19 ounce chickpeas
4 Egg, Whole
1/2 cup brown sugar
1 teaspoon baking powder
2 teaspoons ground cinnamon
1/2 teaspoon ground cloves
1 Fuji Apple
1 tsp grated lemon rind
3 tbs butter
1/4 cup light brown sugar, firmly packed
1/4 teaspoon ground cinnamon
1/4 teaspoon fresh ginger
1 fuji apple

Recipe Directions for Apple Upside-Down cake

  1. Preheat the oven to 350 degrees. Grease a round, spring loaded cake pan.

  2. To make the topping: Melt the butter, and mix with the brown sugar, cinnamon, and ginger. Spoon the mixture into the prepared pan.

  3. Core the apple and remove peel. Slice into apple rings. Space the apple rings atop the brown sugar mixture.

  4. Drain and rinse chickpeas and process them until smooth in a blender or food processor. Core, peel and grate apple. Spoon the puree and apple into a bowl and add the remaining ingredients stirring until fully combined. The mixture will be runny, this is normal.

  5. Pour the batter over apple ring topping and bake for 50 minutes or until a skewer inserted into the center comes out clean. Cut like a Birthday cake :)
