made up recipe to use up leftover phyllo pastry (I had four 25 g sheets); for even tastier results, brush pastry with melted butter instead of spraying with PAM

Recipe Ingredients for Apple Turnovers

100 g phyllo pastry
250 g Granny Smith apples (weight after peeling and dicing)
1 tbsp. lemon juice
35 g raisins
15 g brown sugar
1/2 tsp. cinnamon
1/2 tsp. PAM

Recipe Directions for Apple Turnovers

  1. Preheat oven to 350 F.

  2. Combine diced apples, lemon juice, raisins, brown sugar and cinnamon.

  3. Lay half a sheet of phyllo pastry on a baking sheet. Lightly spray with PAM. Layer the other half of the sheet on top. Lightly spray with PAM. Put 1/3 of the extra sheet on top of that. Repeat this sequence to make three stacks of pastry.

  4. Put a third of the apple mixture in the middle of each pastry stack. Push slightly toward one end and roll up. Repeat for each "turnover".

  5. Lightly spray each "turnover" with PAM (or brush with an egg wash).

  6. Bake for about 20 minutes, or until golden brown.
