Apple and Tempeh Curry Recipe

Delcious savory, spicy, and sweet dish with tempeh. Low cal way to fix tempeh. This analysis does not take into consideration the 200 grams of tempeh that I used, as it was not available in the database and I could not find anything compatible. I used SoyBoy Five Grain Low Fat Tempeh.

Recipe Ingredients for Apple and Tempeh Curry

1 medium onion, chopped
1 medium granny smith apple, chopped
1 clove garlic
1 tbsp curry powder
1/2 tsp cayenne pepper
1 tbsp cornstarch
1/2 tbsp molasses
2 tbsp dried cranberries
2 cups chicken broth

Recipe Directions for Apple and Tempeh Curry

  1. Chop tempeh and place in a saucepan with broth. Bring to a boil, then allow to simmer for 15 mins. When finished, drain but reserve broth.

  2. Meanwhile, spray large pan lightly with oil and saute chopped onions until somewhat soft.

  3. Add chopped apples and garlic, saute for another 5 mins, or until soft.

  4. Add remaining ingredients and mix very well.

  5. Bring to boiling point and add remaining both.

  6. Stir and simmer for 10 mins.

  7. I had to add some water occasionally.
