Recipe Ingredients for Apple & Sultana muffins

2 apples (grated)
4 cups flour
8 tsp baking powder
2 eggs
1/2 cup oil
2 1/2 cups low fat milk
2 carrots (grated)
1 cup sultanas
4 tbs coconut
1 1/2 cups raw sugar

Recipe Directions for Apple & Sultana muffins

  1. Preheat oven to 200 degree celius

  2. Prepare muffin tin with either greasing or patty cases

  3. Stir all ingredients together, just lightly mixing to combine

  4. Spoon into prepare muffin tins and bake 15-20 mins until well risen and golden brown

  5. Cool 2-3 minutes in the muffin tins before placing onto wire rack

  6. Dust with icing sugar if desired

  7. Great kids school lunch snack!!!
