10 oz. pork loin chops, bone-out
1/4 cup apples, peeled, cubed
1/8 tsp. cinnamon
1 spray Pam
1 salt and pepper

Recipe Directions for Apple Stuffed Pork Loin Chops

  1. Preheat oven to 400 degrees. Using a sharp knife, slice pockets into chops by slicing horizontally into the side, and almost through to the other side. Season the chops with salt and pepper. Peel and finely cube 1/4 cup of baking apple, put in bowl, add cinnamon and stir to cover apple cubes. Stuff chops with 1/2 of apples each. Spray oven proof baking dish with Pam, set aside. In non-stick skillet on medium-high heat, add pork chops and sear on one side, 3 to 4 minutes. Flip chops and sear again. Transfer to baking dish. Finish cooking in oven for 8 to 10 minutes, or until cooked through. Internal temperature of 150 degrees, remove from oven. Let rest 5 minutes, or until temperature of 160 degrees.

  2. Slice into halves, makes 4 servings of 3 oz. each.
