Recipe Ingredients for Apple-Stuffed Chicken Breasts

1/2 cup apple, chopped
2 T cheddar cheese, shredded
1 T dry bread crumbs
1/4 tsp salt
1/8 tsp pepper
10 ounces chicken breast, skinless
1/4 cup apple juice, unsweetened
1/4 cup water
1 T butter, melted
3/4 tsp cornstarch
1 tsp cold water
1/8 tsp paprika

Recipe Directions for Apple-Stuffed Chicken Breasts

  1. Set oven to 350 degrees.

  2. In a small bowl, combine apple, cheese, bread crumbs, salt, pepper.

  3. Flatten chicken to 1/4 inch thickness.

  4. Top chicken with apple mixture and roll up, securing it with toothpicks.

  5. Coat shallow baking dish with cooking spray. Put chicken into backing dish.

  6. Pour apple juice and water over chicken and brush the chicken with butter.

  7. Bake for 25-30 minutes.

  8. While chicken cooks, combine cornstarch and water with teaspoon of cold water.

  9. When chicken is cooked, transfer pan juices to saucepan and bring to boil.

  10. Stir cornstarch mixture into pan, cooking and stirring until thickened (about 2 minutes).

  11. Remove toothpicks. Pour mixture over chicken. Sprinkle with paprika
