acorn squash with apple stuffing- this does not include the stovetop needed (look it up and add calories), I used 3 servings prepared cornbread stovetop.

Recipe Ingredients for apple stuffed acorn squash

1 acorn squash
1 granny smith apple
1/4 cup red onion

Recipe Directions for apple stuffed acorn squash

  1. cut squash in half and clean (reserve seeds if you want to bake them for a snack)

  2. add a little water to the bottom of a shallow pan and cook squash at 350 for 20 -30 mins with cut side in water.

  3. pull out when squash is cooked and tender to a fork.

  4. cut apple into small cubes and dice onion. Prepare stovetop and mix all together.

  5. stuff into the center of each half of squash

  6. Bake at 350 for 20 mins

  7. pull out and serve

  8. each half is one serving
