Perfect for breakfast or snack. From Anne Lindsay's "Light Hearted Everyday Cooking" *Note use "Oat Bran" instead of "Bran" Listed in the ingredients, the calories come to the same, but its what the original recipe calls for.

Recipe Ingredients for Apple Streusel Muffins

1 1/3 cups whole wheat flour
1/2 cup bran
1/3 cup granulated sugar
1 tbsp baking powder
1 tbsp cinnamon
1/4 tsp salt
1 1/4 cup chopped peeled apple
1 egg, lightly beaten
1 cup milk
1/4 cup vegetable oil
2 tbsp packed brown sugar
1/4 tsp cinnamon
1/4 tsp nutmeg

Recipe Directions for Apple Streusel Muffins

  1. In a large bowl, mix together flour, oat bran, sugar, baking powder, cinnamon and salt. Stir in chopped apple.

  2. In separate bowl, combine egg, milk and oil; stir into flour mixture until just moistened. Do not overmix. Spoon into nonstick or paper-lined muffin. Bake in 400 degrees F (200C) oven 15 to 20 minutes, or until golden and firm to the touch
