Apple Spice Muffins Recipe

Wonderfully low-fat muffins that replace oil with homemade apple sauce, and the sugar with maple syrup. Delicious served warm with a dollop of fat-free fromage frais and a drizzle of maple syrup.

Recipe Ingredients for Apple Spice Muffins

6 oz self-raising flour
4 oz rolled oats
1 tbsp ground cinnamon
1 tsp ground allspice
1 tsp ground ginger
1 tsp baking powder
2 tsp baking soda
1 pinch salt
1 tbsp unsalted butter
10 oz apples
4 oz sultanas
2 oz maple syrup
2 egg whites
8 oz water
1 tsp lemon juice
1 tbsp brown sugar

Recipe Directions for Apple Spice Muffins

  1. Set your oven to 180C/360F/Gas 4, and line a muffin tin with paper cases.

  2. In a large mixing bowl, sift the flour, spices, baking powder, and baking soda. Add the oats and salt, and combine with a large metal spoon.

  3. Core and peel the apples, then finely chop. Add to a saucepan with the butter and lemon juice, cover with a lid, and gently boil until the apples are soft. Leave to cool.

  4. In a seperate bowl, or in a food processor, whisk the egg whites until they are firm. Once your apple mixture has cooled slightly, mash with a potato masher and add it to the egg. (If you are using a food processor, just add the apples and mix.)

  5. Next add the water and maple syrup to the wet ingredients.

  6. Add the wet mixture and the sultanas to the dry mixture and stir until fully combined.

  7. Spoon into the muffin tins and sprinkle each one with a little brown sugar.

  8. Bake in the oven for 20-25 minutes.

  9. Variation: Feel free to replace the apples with pears, or use a mixture of the two.

  10. Variation: For a lighter muffin, miss out the butter and boil the apples in a tablespoon of water instead. Doing this subtract 8 calories and 1g fat from each muffin.

  11. Variation: For an even lighter muffin, do as above and cut out half of the sultanas. Doing this will subtract 23 calories and 1g fat from each muffin.

  12. Variation: For a richer muffin, add an extra tablespoon of butter to the apples, use an extra ounze of maple syrup, and replace the water with low fat milk. This will add 23 calories, 1.1g fat and 2.4g sugar to each muffin.
