I made this for my daughter, who has GERD.

Recipe Ingredients for Apple Spice Cake

1 1/2 c whole wheat flour
1 1/2 c unbleached white flour
1 tbsp ground cinnamon
1 tsp baking soda
1 tsp salt
1 c buttermilk, low fat
1/3 c canola oil
1 1/2 c granulated sugar
2 eggs, large
1/4 c egg substitute
1 tsp vanilla extract
3 cups chopped apple, cored and sliced apples cut into 1/2 inch pieces
1/2 c pecans, chopped

Recipe Directions for Apple Spice Cake

  1. Preheat oven to 350 degrees. Coat a 12 cup Bundt pan or tube pan with canola cooking spray; set aside.

  2. Add flours, cinnamon, baking soda, and salt to medium bowl or 8 cup measuring cup and whisk to blend well.

  3. Add buttermilk, canola oil, sugar, eggs, egg substitute, and vanilla to large mixing bowl and with the paddle attachment, beat together on medium-high speed until smooth. (about 2 minutes)

  4. On low speed, slowly add in dry ingredients, mixing just until blended. Stir in chopped nuts and chopped apples. Pour into the prepared pan and bake until cake tester inserted in the cake comes out clean, about 1 hour and 15 minutes. Remove from oven and let cake cool for about 10 minutes, and then invert cake onto a serving plate.
