Recipe Ingredients for Apple-Rhubarb Crisp

3/4 c flour
3/4 c packed brown sugar
1/2 c oats
1/2 tsp ground cinnamon
6 tbsp vegan butter
1/2 c walnuts, finely chopped
3 gala apples, peeled and chopped
3/4 lb rhubarb, chopped
3 tbsp sugar
2 tsp flour
1/2 tsp vanilla extract

Recipe Directions for Apple-Rhubarb Crisp

  1. Preheat the oven to 400 F. Combine apples, rhubarb, sugar, flour, and vanilla extract in a large bowl and toss to coat. Transfer the mixture to an 8x8 baking dish.

  2. Mix the topping ingredients together in a medium bowl: flour, brown sugar, oats, cinnamon, cloves. Rub in the butter until the mixture begins to clump together. Mix in the nuts.

  3. Bake until the fruit is tender, about 45 minutes. Cool 20 minutes before serving warm.
