Recipe Ingredients for Apple Raisin pancakes

1 large (3-1/4 Apples
0.33 cup, packed Raisins, Golden Seedless
6 tsp packed Sugars, Brown
0.5 tsp Cinnamon, Ground
4 large Egg, Whole
0.66 cup Milk, Lowfat, Fluid, 1% Milkfat
0.67 cup Wheat Flour, White, All-purpose, Enriched, Unbleached
2 tbsp Butter

Recipe Directions for Apple Raisin pancakes

  1. 1Preheat oven to 350F. Spray 9-inch pie plate with nonstick cooking spray.

  2. .2Combine apple, raisins, brown sugar and cinnamon in medium bowl. Transfer to prepared pie plate.

  3. .3Bake mixture, uncovered, until apple begins to soften, 10 to 15 minutes. Remove from oven. Increase oven temperature to 450F.

  4. .4Lightly beat eggs in medium bowl. Add milk, flour, and melted butter; whisk together until well blended. Pour egg mixture over apple mixture in pie plate.

  5. .5Bake until pancake is golden brown, about 15 minutes. Invert onto large serving dish. Sprinkle with confectioners' sugar, if desired. Garnish with fresh raspberries and serve with maple syrup, if desired.
