Recipe Ingredients for Apple Raisin Flax Cake

2 tbs granulated sugar
1/4 cup No Calorie Sweetener
1/3 cup non-fat milk
1 tbs olive oil
2 tbs unsweetened apple sauce
3 egg whites
1 cup Gold Medal? all-purpose flour
2 tbs flaxseed meal
1 teaspoon baking powder
1 tablespoon ground cinnamon
1/2 teaspoon salt
2 medium apples
1/3 cup raisins

Recipe Directions for Apple Raisin Flax Cake

  2. Heat oven to 350?F. Spray bottom and side of 8- or 9-inch round cake pan with cooking spray.

  4. In large bowl, mix flour, sugar, baking powder, salt, 1/2 teaspoon cinnamon and the nutmeg until well blended. Stir in egg product, oil, applesauce, and1 teaspoon vanilla until flour mixture is moistened. Stir in apples. Batter will be very thick and chunky. Spread in pan.

  6. Bake 35 to 45 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan to cooling rack.

  8. Meanwhile, in small bowl, mix powdered sugar, 1/8 teaspoon vanilla, dash cinnamon and 1 tablespoon milk. Stir in additional milk, 1 teaspoon at a time, until smooth and thin enough to drizzle. Drizzle over warm cake. Serve warm.
