The sweetener is stevia. You can find in the health food store. I used the packets. Stevia is a natural plant-based sweeter with no carbs or calories. Does not leave a bitter taste when baking.

Recipe Ingredients for Apple - Pumpkin Waffles

1/2 cup whole wheat flour
1/3 cup oatmeal
1 1/2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
4 packets sweetener (stevia)
2 eggs whites
1/4 cup egg substitute
2 tbsp vegetable oil
1/2 cup applesauce
1/2 apple, finely chopped
1 cup skim milk
1/4 cup pecans, finely chopped

Recipe Directions for Apple - Pumpkin Waffles

Combine all dry ingredients into a large bowl and mix well. Whip egg whites in a mixer until they form a stiff peak. In a medium bowl combine the remaining wet ingredients; mix well. Combine dry and wet ingredients and mix well. Fold in the egg whites. Pour batter into a hot, greased waffle iron. Waffles usually take around 4 minutes, or until you can no longer see steam coming from the waffle iron.
