Recipe Ingredients for Apple Pumpkin Muffins

1 1/2 c. all-purpose flour
1 c. whole wheat flour
1 1/2 c. sugar
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/2 tsp. salt
1/4 tsp. ground nutmeg
2 eggs
1 c. canned pumpkin
1/2 c. safflower oil
1 tsp vanilla
2 c. chopped peeled apples

Recipe Directions for Apple Pumpkin Muffins

  1. In a large bowl, combine first seven ingredients.

  2. In a small bowl, combine eggs, pumpkin, vanilla, and oil; stir into dry ingredients just until moistened.

  3. Fold in apples.

  4. Fill greased or paper lined muffin cups two-thirds full.

  5. Bake at 350 degrees fo 30-35 minutes or until muffins test done.

  6. Cool for 10 minutes before removing from pan.

  7. Yield 1.5 dozen.
