Recipe Ingredients for Apple pie

2 pounds apples
2 tbsp flour
1/2 cup sugar
1 1/2 tbsp lemon juice
1/2 tsp ground cinnamon
1/4 tsp ground allspice
1/4 tsp ground ginger
1/4 tsp salt
4 tbsp butter, diced
4 cups flour
2 tsp salt
20 tbsp butter, cut in pieces
1/2 cup ice water

Recipe Directions for Apple pie

  1. For the crust, sift flour and salt into a bowl

  2. Add butter and cut in with a pastry blender or rub between your fingertips until mixture resembles coarse crumbs. With a fork, stir in just enough ice cold water to bind the dough.

  3. Gather into 2 balls, wrap in wax paper and refrigerate for 20 minutes.

  4. On a lightly floured surface roll out 1 dough ball 1/8 inch thick. Transfer to a pie pan (9+") and trim the edge. Place a baking sheet in the center of the oven and preheat to 425F.

  5. Core and slice the apples into a bowl. Toss with the flour, sugar, lemon juice, spices, and salt. Spoon into pie shell; dot with butter.

  6. Roll out the remaining dough. Place on top of the pie and trim to leave a 3/4 inch overhang. Fold the overhang under bottom dough and press to seal. Crimp the edge.

  7. Roll out the scraps and cut out leaf shapes and roll balls. Arrange on top of the pie. Cut steam vents.

  8. Bake for 10 minutes. Reduce the heat to 350F and bake until golden, 40-45 min more. If the pie browns too quickly, protect with foil.

  9. Tip: select apples that are firm and tart, such as Jonathan, Greening, Granny Smith, or Winesap. Macintosh and Delicious soften too much during cooking.
