Recipe Ingredients for Apple-Pecan Muffins

3/4 cup brown sugar
1/4 cup pecans, chopped
1 tsp cinnamon
2 cups flour
1 tsp baking soda
1/2 tsp salt
1/4 cup canola oil
2 eggs
1 cup applesauce, unsweetened
1 tsp vanilla extract
3/4 cup buttermilk
1 apple, peeled, cored, and diced into 1/4 inch pieces

Recipe Directions for Apple-Pecan Muffins

Preheat oven to 375F and grease muffin tins. Combine 2 tbs of the brown sugar with pecans and cinnamon. Set aside. Mix together flour, baking soda, flaxseed, and salt, set aside. Combine remaining brown sugar and oil, then add eggs one at a time. Add applesauce and vanilla. Stir in flour mixture in batches, alternating with buttermilk. Spoon into muffin tins, filling 2/3 full. Sprinkle with sugar/pecan topping. Bake for 15 minutes.
