Recipe Ingredients for Apple Pear Jicama Waldorf Salad

1 lb Yambean (Jicama)
2 cup unsweetened pineapple juice
3 Fuji apples
3 pears, (variety of colors)
1/2 cup raisins, red or yellow
1/2 cup almonds, sliced and toasted
1/2 cup chopped toasted walnuts
2 cup Fresh Red Seedless Grapes
1/4 cup unsalted sunflower seeds
12 oz Grapeseed Oil Vegenaise

Recipe Directions for Apple Pear Jicama Waldorf Salad

  1. Peel the jicama; as you dice the jicama, place it in a bowl with pineapple juice to prevent browning for about 2 minutes.

  2. Drain the jicama, reserving the liquid to be used for the other fruit.

  3. Wash and dice the apples, placing them in a bowl with the reserved pineapple juice to prevent browning about 2 minutes.

  4. Drain the apples, reserving the liquid.

  5. Wash and dice the pears, placing them in a bowl with the reserved pineapple juice to prevent browning.
