A slightly sweet pancake - great way to start the day.

Recipe Ingredients for Apple Pancakes

2 cups diced apple
3/4 cup all purpose flour
3/4 cup whole wheat flour (I used gluten free flour)
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk (low-fat - 1%)
3/4 cup nonfat milk
2 large eggs
1 tablespoon honey

Recipe Directions for Apple Pancakes

  1. Put apples in the microwave and cook for 1 minute.

  2. Mix flours, baking powder, baking soda, salt in one bowl and mix well.

  3. Mix 1 cup buttermilk, milk eggs and honey in another. START WITH 1/4 CUP OF MILK to begin with, adding the remaining 1/2 cup to get the right consistency.

  4. Serve with nutty topping and sugar free syrup.
