A relatively "heart healthy" muffin, as far as I can tell. Not too sweet, but very moist and yummy!

Recipe Ingredients for Apple Oatmeal Muffins

1 c. cooked oatmeal
1 c. whole wheat flour
1 tsp. baking powder
1/2 tsp. salt
1/4 c. brown sugar
1 egg
1 c. 1% milk
1/2 medium apple
1 tbsp. brown sugar
2 tsp. cinnamon

Recipe Directions for Apple Oatmeal Muffins

  1. Mix flour, powder, salt and sugar.

  2. Add milk, egg and oatmeal.

  3. Scoop batter into lined, sprayed muffin tins.

  4. Place one apple slice on top of each muffin.

  5. Sprinkle with brown sugar and cinnamon. You may have some of this left over.
