These cookies are quick to make and filling so you only need to eat one or two! I love them for an afternoon snack.

Recipe Ingredients for Apple Oat Cookies

1/2 cup butter
1/2 cup white sugar
1/4 cup brown sugar
2 eggs
1 cup whole wheat flour
1/2 tsp nutmeg
1/2 tsp salt
1 tsp baking powder
1 tsp cinnamon
1 cup rolled oats
1 cup walnuts
1 cup diced apple

Recipe Directions for Apple Oat Cookies

  1. Pre-heat oven to 350F.

  2. Peel and dice one apple, chop walnuts and set aside.

  3. Cream butter and white sugar until smooth. Add the brown sugar and eggs and cream until all ingredients are well blended.

  4. Mix the flour, spices, baking powder and salt in a bowl, then add to the butter/egg mixture. Stir until combined.

  5. Fold the oats, nuts and apples into the batter and mix until combined.

  6. Spoon the batter onto ungreased baking sheets using a tablespoon. The cookies will spread during baking. Bake for 12-15 minutes, until edges are golden. Remove from pans and cool on a wire rack.
